Cake Ingredients

  • 1.75 cups all-purpose flour
  • 0.75 cups unsweetened cocoa powder
  • 1.5 tsp baking powder
  • 1 cups granulated sugar
  • 3 large eggs (room temperature)
  • 1 cups whole milk
  • 0.5 cups unsalted butter (softened)

Frosting and Filling

  • 2 cups heavy cream (for whipping)
  • 1 cups tart cherries (fresh or jarred)

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
  • In a bowl, whisk together the flour, cocoa powder, baking powder, and sugar until well combined.
  • In another bowl, beat the eggs, milk, and softened butter until smooth.
  • Add the wet ingredients to the dry mixture and mix until just combined.

Baking

  • Divide the batter evenly between the two greased pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Let the cakes cool in the pans for about 10 minutes before transferring to wire racks to cool completely.

Assembly

  • Whip the heavy cream with an electric mixer until soft peaks form, then gradually add a little sugar until stiff peaks form.
  • Once the cakes are cool, slice each layer in half horizontally to create four layers.
  • Layer whipped cream and cherries between each layer, then frost the entire cake with the remaining whipped cream.
  • Decorate with chocolate shavings or additional cherries as desired.

Notes

Ensure all your ingredients are at room temperature for the best results. When whipping cream, use a cold bowl and beaters to achieve the right texture. Avoid overmixing your batter; mix until just combined.
