  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup buttermilk Can be made by adding 1 tablespoon of vinegar or lemon juice to milk and letting it sit for 5 minutes.

Preparation

  • Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  • In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt.
  • Add the softened butter, eggs, vanilla extract, and buttermilk to the dry ingredients.
  • Using an electric mixer on medium speed, beat the mixture until smooth and well combined for about 2-3 minutes.
  • Divide the batter evenly between your two prepared cake pans.
  • Place the pans in the preheated oven and bake for 25-30 minutes, checking for doneness with a toothpick.
  • Once baked, let the cakes cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
  • Frost with your favorite vanilla frosting and serve.

Notes

Make sure your butter is softened, not melted, to achieve the right texture. Avoid overmixing the wet ingredients to keep the cake fluffy. Do not open the oven door while baking to prevent collapse. This cake serves well with ice cream or chocolate sauce.
