Preparation

  • Start by gathering all your ingredients. Mince the garlic, chop the parsley, and grate the parmesan cheese.

Cooking Tortellini

  • Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions, usually about 3-5 minutes until they float to the top. Drain and set aside.

Cooking Steak

  • Season the steak with salt, black pepper, garlic powder, and smoked paprika on both sides. In a large skillet, heat the olive oil over medium-high heat.
  • Once hot, add the steak and sear for about 3-4 minutes on each side for medium-rare. Remove from the skillet and let it rest.

Making the Sauce

  • In the same skillet, add butter and let it melt.
  • Add minced garlic and cook for about 30 seconds until fragrant.
  • Pour in heavy cream and whole milk, stirring to combine.
  • Gradually add the parmesan cheese while stirring until it melts into a smooth sauce.

Combining Ingredients

  • Slice the steak into bite-sized pieces.
  • Add the cooked tortellini to the cream sauce, then add the steak. Toss everything together until it is well coated.
  • Adjust seasoning with extra salt and pepper if needed.

Notes

Ensure your skillet is hot enough before adding the steak; this helps achieve a nice sear. Don’t overcook the steak; a medium-rare finish keeps it tender and juicy. If the sauce becomes too thick, add a touch more milk or cream to reach your desired consistency.
