  • 1 pound colorful carrots Also known as rainbow carrots
  • 2 tablespoons butter Can be replaced with olive oil or coconut oil for dairy-free option
  • 2 tablespoons honey Can be replaced with maple syrup or agave nectar for vegan option
  • 2 tablespoons brown sugar
  • to taste Fresh thyme
  • to taste Salt & pepper

Preparation

  • Start by washing the colorful carrots thoroughly. If they are large, peel them and cut them into sticks. If they are small, you can leave them whole or just trim the ends.
  • In a small saucepan, melt 2 tablespoons of butter over low heat. Once melted, add 2 tablespoons of honey and 2 tablespoons of brown sugar. Stir until everything is well combined and the sugar has dissolved.
  • Place the prepared carrots in a large bowl. Drizzle the honey butter mixture over the carrots, and sprinkle with salt, pepper, and fresh thyme. Toss everything together to ensure the carrots are evenly coated.

Roasting

  • Preheat your oven to 400°F (200°C). Spread the carrots on a baking sheet in a single layer.
  • Roast in the oven for about 20-25 minutes, or until they are tender and caramelized, turning them halfway through for even cooking.

Notes

Make sure your oven is properly preheated to ensure even roasting. Avoid overcrowding the baking sheet to prevent steaming.
