  • 1 lb Italian sausage Use mild or spicy based on preference.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth Can substitute with vegetable broth for a vegetarian version.
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup ditalini pasta Can be substituted with other small pasta shapes.
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version.
  • ½ cup grated Parmesan cheese Extra for garnish is recommended.
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions
 

Preparation

  • In a large pot, cook the Italian sausage over medium heat until browned.
  • Add the chopped onion and minced garlic, cooking until the onion is translucent.

Cooking

  • Pour in the chicken broth and diced tomatoes; bring to a boil.
  • Stir in the ditalini pasta and cook according to package instructions until al dente.
  • Reduce heat, and stir in the heavy cream and Parmesan cheese.
  • Season with salt and pepper to taste.

Serving

  • Serve hot, garnished with fresh basil or parsley.

Notes

Store any leftover soup in an airtight container in the refrigerator for about 3 to 4 days. It can be reheated on the stove or in the microwave. For extra flavor, consider adding more grated Parmesan cheese on top before serving.
