  • ¼ cup honey
  • 2 tablespoons chopped fresh parsley

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking.
  • Slice the sweet potatoes into ½-inch thick rounds. A sharp knife will make this easier, so take your time to ensure even thickness for uniform cooking.
  • In a large bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika until they are evenly coated.

Cooking

  • Arrange the seasoned sweet potato slices in a single layer on the prepared baking sheet without overlapping.
  • Roast in the preheated oven for 25-30 minutes, turning halfway through.
  • Once roasted and slightly cooled, arrange the sweet potato rounds on a serving platter.
  • Sprinkle crumbled feta cheese over the top, drizzle with honey, and garnish with freshly chopped parsley.

Notes

To achieve the best texture, ensure your sweet potato slices are uniform in thickness. This helps them cook evenly. Rotate the baking sheet halfway through for even browning. Store leftovers in an airtight container in the fridge for up to four days. Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes or use a microwave.
