Ingredients
  

Dough Ingredients

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract

Frying Ingredients

  • Oil for frying Heat to 350°F (175°C)
  • Powdered sugar for dusting Dust just before serving

Preparation

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, mix the milk, eggs, and vanilla until combined.
  • Gradually add the wet ingredients to the dry ingredients and mix until a dough forms.
  • Turn the dough out onto a floured surface and roll to about 1/4 inch thick.
  • Cut the dough into squares or desired shapes.

Cooking

  • Heat oil in a deep fryer or large pot to 350°F (175°C).
  • Carefully drop the beignet dough into the hot oil and fry until golden brown, about 2-3 minutes on each side.
  • Remove with a slotted spoon and drain on paper towels.
  • Dust with powdered sugar and serve warm.

Notes

Keep the oil at 350°F (175°C) for even frying. Do not overcrowd the pot; fry in small batches. Dust with powdered sugar right before serving so it does not melt away.
